    Billecart-Salmon Les Rendez-Vous No. 4 - Chardonnay Extra Brut


    In its continuous quest for excellence, Billecart-Salmon is constantly experimenting with new methods to further improve the quality of its wines. A range has been born from the fruit of this work to offer you a unique tasting experience. Precise, New, Bold, each new release will epitomise an exceptional terroir and a champagne grape variety as well as the art of a meticulous winemaking.

    This fourth wine highlights Chardonnay from Mesnil-sur Oger, a historic terroir of the Côte des Blancs, classified as a Grand Cru. It comes exclusively from the 2015 vintage, and is slowly and meticulously aged on its lees. A selective approach is used, based on the purity of fruit and a balance of flavours, with low dosage.

    The delicacy of its floral notes and the sweetness of its fruity aromas from this single varietal wine will brighten up your most beautiful shared moments.

    Tasting Notes:
    Its luminous golden yellow colour offers a radiant, sparkling finish that gives way to a fine, persistent bubble.

    Its sensory development leans on distinguished aromatic floral notes, which speaks to its great minerality of fruits (jasmine, fresh pineapple and buttery brioche). Its sensual, refined flavour is based on white pome fruit (tart pear, medlar). It is the perfect expression of subtly disciplined Chardonnay, meticulously matured on the lees.

    A captivatingly tense tactile sensation is dominated by a gritty, seductive spirit (Menton lemon, blood orange and hazelnut powder). 
    Radiant complexity pairs with a characteristic touch of salinity of the great terroirs of the Côte des Blancs. A delicate finish with hints of bergamot and almond milk.

    Serving:
    This single-varietal & Grand Cru terroir offers an outstandingly delicious concentration of flavours. 

    Served at cellar temperature (10/12° C), culinary pairings can include sea bass cooked in a salt crust with thyme or scallop yakitori.
