Ayala Le Blanc de Blancs A/18
A/18 first edition of Ayala Le Blanc de Blancs:
This first vintage edition of A/18 blends 6 complementary crus selected from the 22 that came into our winery during the 2018 harvest : Chouilly, Cramant, Le Mesnil-sur-Oger, Oger, Bisseuil and Cuis.
Over six years ageing in the cellar brings some of the aromatic complexity and creamy texture that Ayala Le Blanc de Blancs is known for.
The Extra-Brut dosage, at 5g/l, makes this a champagne of outstanding purity and freshness.
Tasting Notes:
Bright, with very fine, dynamic bubbles. On the nose, Ayala Le Blanc de Blancs A/18 reveals elegant aromas of pear, grapefruit and jasmine, followed by honeyed tones.
On the palate, the wine is forthright and open with notes of blood orange and pastry. An extremely vivacious wine with beautiful bitter notes and the chalky minerality that is so characteristic of Maison Ayala's signature cuvée.
Serving:
Elegant, simple cuisine focussed around quality ingredients without adornment, echoing the outstanding purity of this wine. Its vivacious character makes it an excellent aperitif, but it would also go exceptionally well with starters or fish dishes such as scallop carpaccio, citrussy seabass tartare, or oysters.
Chardonnay, Maison Ayala signature grape variety:
For many years now, the Champagne Ayala team has been exploring Chardonnay's potential in the light of global warming. The Chardonnay grape is more capable of adapting to climate variation and warmer temperatures.
The last few years have all provided ideal growing conditions for Chardonnay, naturally preserving acidity and freshness until harvest while also proving less vulnerable to disease, ensuring pure, elegant champagnes after cellar ageing.
As the most featured grape variety in Champagne Ayala's blends and the foundation of the pure and balanced style of the Maison, Chardonnay is the essence of the brand ambition embodying the
excellence and expertise of this grape variety in Champagne. Therefore, Maison Ayala makes Le Blanc de Blancs its signature champagne.

A demanding grape growing approach paying tribute to nature
Every grape from our Terroirs has been subject to new specifications since 2018, following the installation of our new winery and the arrival of Julian Gout, Cellar Master at Maison Ayala.
Grapes are sorted in the vineyard, berries and musts are tasted during the harvest, and musts are closely analysed, all to facilitate a made-to-measure micro-vinification.
The 2018 viticultural year:
A rainy winter and a mild spring were followed by a dry, sunny summer, heralding optimal conditions for an early harvest. This meant that grapes were plentiful and in near-perfect condition, particularly the Chardonnays. Despite a warm year, the region's finest Terroirs showed themselves at their very best, thanks to the cool clay sub-soils in the Champagne region.
